I totally forgot about that gigantic pack of oats which I bought quite some time ago. The expiration date is just a few weeks away and how am I suppose to finish all of them in such a short time?
Hence, I decided to use oats as the main ingredient for baking so I could consume as much oats as I could in the fastest way possible. After pondering on it for a few days, I decided to try making baked oatmeal bites so I could snack on them whenever I had the urge to emotional eat something without any epic reason.
• 2 cups of oats
• 1 teaspoon of baking powder
• 1 teaspoon of salt
• 2 teaspoons of cinnamon powder - I used pumpkin spice powder because that's my personal favourite and a little bit of cocoa powder
• cranberries / raisins / nuts - anything of your personal choice
Wet Ingredients:
• 2 cups of milk
• 1 egg
• 1/3 cup of honey/ maple syrup / sugar - I chose not to put sugar in mine so I could binge on them guiltlessly
• 2 teaspoons of vanilla extract
• 1 teaspoon of coconut oil / any vegetable oil
Steps:
1. Preheat your oven at 180°C or 350°F.
2. Mix all the dry ingredients in one bowl.
3. Mix all the wet ingredients thoroughly in another bowl.
4. Pour the dry ingredients into a baking pan.
5. Pour the wet ingredients to the dry ones in the baking pan.
6. Bake it for 40-45 minutes until it turns golden brown. Poke it with a fork - if it's not runny on the inside, then it's ready to be served.
There you go, an easy and healthy snack is done! All you need is 10 minutes of preparation time and approximately 40 minutes of baking time.
PS: It goes well with a little drizzle of raw honey on the top and a cup of coffee in the morning!
